Za’atar Roasted
Farm Carrots
Za’atar Roasted Farm Carrots with Amaltheia Feta, Honey, & Pistachios

Ingredients:

1 Bunch farm carrots (or approx. 5-7 whole medium sized carrots )

2 Cloves fresh peeled garlic, thinly sliced

3 Tablespoons of yummy olive oil
-
2 Tablespoons Za’atar spice blend
-
1 Teaspoon smoked paprika
-
2 Tablespoons Montana local honey
-
2 Teaspoons kosher salt
-
1 Teaspoon lemon juice
-
2 Tablespoons Amaltheia Feta, crumbled
-
2 Tablespoons chopped pistachios
Heat your oven to 425 degrees. Wash your carrots well and slice them in half length wise. In a medium sized cast iron pan or heavy bottom saute pan, bring olive oil to medium heat and add your garlic slices. Sweat the garlic slices in the oil until golden brown in color on both sides, remove them from the pan and set aside.
Toss your carrots, garlic oil, Za’atar spice, smoked paprika, and salt in a large bowl and place flat side down back into your pan on medium heat. Let the carrots start to sizzle and brown on one side and place into your oven. Roast about 10 minutes or until fork tender, but keeping the integrity of the carrot (meaning, don’t cook these yummy carrots until they are mushy, you want them to have a slight crunch to them).
Once the carrots are roasted to your liking, remove them from the oven, and just before putting them on your plate of choice, give them their fresh squeeze of lemon juice and a little toss. Plate the carrots in a nice little pile and top with your feta & chopped nuts!
