Carrot Bisque with Cherry Tomato & Celery Salsa​

This quick and easy lil’ soup will brighten your day and your taste buds! With a hint of curry, and sweetness from the carrots, eat this as a starter to your meal, or, as your meal! Just 30 minutes total to eat your heart out!

Ingredients:

4 carrots, cleaned well, and cut into small half moon pieces that will cook quickly, divided into half.

½ Medium sized sweet onion, sliced thinly

3 Stalks of celery, peeled to remove stringy outside, and sliced thin, set 2 tablespoons aside for the salsa garnishes

4 Small cherry tomatoes, cut rustic for your lil’ salsa garnish

3 Celery leaves, slice thin for garnish

1 Large garlic clove, sliced thin

1 Heirloom tomato, cut into chunks
-
Pinch yellow curry powder
-
Small pinch salt
-
2 Teaspoons brown sugar

1 Teaspoon hot honey (adds heat & sweet). *PRO TIP* This should be a signature item in your pantry!

2 Tablespoon unsalted butter, cold

3 Tablespoons heavy cream (not necessary for this to taste great, but I had it in my fridge and it adds a touch of fat for richness).
Bring two cups of water to a rolling boil. Add half of your carrots to the boiling water and let cook until soft. Create a small ice bath with a bit of ice and cold water. This is to shock your carrots, seal in the carrot flavor and preserve the bright orange color! Remove from heat, saving the water for your “stock” and setting aside the carrots into the ice plunge to lock in your flavors!
Wipe out your small sauce pot and place back on the heat. Add 1 Tablespoon of butter, onion, remaining carrots, celery, garlic, and curry powder. Cook everything until very soft, then add your tomato. This tomato adds acid, and a bit of tartness to the soup. Add your carrot “stock” back into the pot, simmer for about 15 minutes.
Place ingredients in the sauce pot into the blender, start it on medium high, slowly drop in your nub of butter, and drizzle in your heavy cream. Buzz until very smooth! In a small little bowl, add your sliced garnishes and drizzle with olive oil, place on top of soup in each bowl!
