An impressive condiment for the fridge for a busy holiday season!

When I am all consumed with the holiday buzz, I like to create easy outs for myself that taste delicious and complement any dish I plan for hosting! Here is a simple lil’ condiment for you to store in your fridge to accompany any protein dish or dip for entertaining!
Recipe Makes 2 cups
Special Equipment: Blender
Ingredients:

2 Large beets

2 Cloves garlic, roasted in olive oil until soft

1 Lemon, zested and juiced

Pinch sea salt

2 Tablespoons olive oil

Water for consistency

Peel your beets, cut them down to small cuts, and top what water just to cover.

Roast beets in oven until soft. Put in blender with roasted garlic glove, lemon juice, and zest, and pinch of good sea salt. Puree everything in blender until very smooth. Season to you liking!
I use this puree to compliment roasted chicken dishes, add it to a hummus for color and flavor, and also use it as its own puree for dips! Enjoy!
